Rosemary Olive Oil Loaf with Orange


ingredients

  • ¾ cup Zeit extra virgin olive oil

  • 3 eggs; room temperature

  • ½ cup 2% milk

  • 1 ½ cups granulated sugar

  • 1 tbsp each: vanilla extract, orange zest, finely chopped fresh rosemary

  • Juice from ½ small orange

  • 2 tsp baking powder

  • Pinch each: nutmeg & cinnamon

  • ½ tsp sea salt

  • 2 cups all-purpose

  1. Arrange oven rack to center and preheat to 350 degrees. Prepare a 9×5 loaf plan by greasing with butter and lining with parchment paper. Set aside.

  2. In a large mixing bowl add: olive oil, eggs, milk, sugar, vanilla extract, & orange juice. Whisk together until combined.

  3. Add to mixture: Orange zest, rosemary, baking powder, nutmeg, cinnamon, sea salt. Stir to combine.

  4. Fold in flour until *just* combined. Be mindful not to overmix.

  5. Pour into the prepared loaf pan and bake for approximately 60 minutes; or until a toothpick comes out mostly clean. Allow to cool completely before topping & slicing.

  6. Top with a dusting of powdered sugar and garnish with fresh rosemary and/or orange slices.

  7. Serve with an extra drizzle of Zeit extra virgin olive oil. Optional, but delicious!
